The Gimlet is a two-ingredient drink, which means the lime cordial is half the cocktail — and for decades the only option was the neon-green stuff that tastes mostly of the twentieth century. This one is lime juice and sugar with a whisper of demerara, and that's the entire list. Bright, tart, honest lime with a faint molasses floor under it.
Gin, cordial, ice: a proper Gimlet, finally. It's the backbone of a Suffering Bastard, sharpens a Gin & Tonic, and turns soda water into the best no-proof drink in the fridge. Anywhere a recipe says “lime cordial” and you've been wincing, stop wincing.
Once opened, refrigerate and use within 90 days — unopened, it keeps for two years from the date of manufacture.
